A Few Pressure Cooker Times

Here is a little more about pressure cooker times.





White Rice High Pressure 10 Minutes (1 1/2 to 2 cups liquid per cup rice same with brown)
Brown Rice High Pressure 20 Minutes
Green Lentils High Pressure 10 to Minutes Depending on Lentil Size
Red Lentils Bring to High Pressure Then Turn Off (Some guides say longer but it turned to mush for me if done any longer)

With the Rices you can throw meat and vegetables in. Sliced Chicken, Small Pieces of Pork or cubes of beef.
To spice up any of the grains cook in broth or stock.

Chicken and Rice is by far the easiest and really tasty.

Eating Insects (Entomophagy)

I've always be interested in Eating Insects. My brother got a cook book just for eating Insects.
Here is a little information about it straight from Wikipedia.

A total of 1417 species of insects have been recorded as being eaten by over 3000 ethnic groups. These include 235 species of butterflies and moths, 344 species of beetles, 313 species of ants, bees and wasps as well as 239 species of grasshoppers, crickets and cockroaches, amongst others. Other commonly eaten insects are termites, cicadas and dragonflies.

Though my brothers cook book only uses a few different kinds, mostly Grasshoppers and Crickets.

Insects can be a good source of not only protein, but also vitamins, minerals, and fats. For example, crickets are high in calcium, and termites are rich in iron. One hundred grams of giant silkworm moth larvae provide 100 percent of the daily requirements for copper, zinc, iron, thiamin, and riboflavin. Ants can also contain protein depending on the size of the insect. The smaller the species, the greater the chance of it containing minimal or no protein. Grubs of the sago palm weevil (a staple in Papua New Guinea) are laden with unsaturated fat. Many insects contain abundant stores of lysine, an amino acid deficient in the diets of many people who depend heavily on grain.


The intentional cultivation of arthropods for human food, referred to as minilivestock, is now emerging in animal husbandry as an ecologically sound concept. Minilivestocking suggests that a wide variety of small animals, include arthropods, be reared as nutritious food, the major advantage being that they do not have to be fed on grains thus saving many crop species for human consumption. It is also concerned to be much more ecologically friendly than traditional livestocking.[24]
Insects generally have a higher food conversion efficiency than more traditional meats, measured as efficiency of conversion of ingested food, or ECI.[25] While many insects can have an energy input to protein output ratio of around 4:1, raised livestock has a ratio closer to 54:1.[26] This is partially due to the fact that feed first needs to be grown for most traditional livestock. Additionally endothermic (warm-blooded) vertebrates need to use a significantly greater amount of energy just to stay warm whereas ectothermic (cold blooded) plants or insects do not.[27] An index which can be used as a measure is the Efficiency of conversion of ingested food to body substance: for example, only 10% of ingested food is converted to body substance by beef cattle, versus 19–31% by silkworms and 44% by German cockroaches. Studies concerning the house cricket (Acheta domesticussteers (oxen) when losses in carcass trim and dressing percentage are counted.[10]

Insects reproduce at a faster rate than beef animals. A female cricket can lay from 1,200 to 1,500 eggs in three to four weeks, while for beef the ratio is four breeding animals for each market animal produced. This gives house crickets a true food conversion efficiency almost 20 times higher than beef.[10] For this reason and because of the essential amino acids content of insects, some people, on ecological grounds, propose the development of entomophagy to provide a major source of protein in human nutrition. Protein production for human consumption would be more effective and consume fewer resources than vertebrate protein. This makes insect meat more ecological than vertebrate meat.
Insects have attractive qualities for food production besides their high energy efficiency. For example the spatial usage and water requirements are only a fraction of that required to produce the same mass of food with cattle farming. Production of 150g of grasshopper meat requires only very little water, while cattle requires 3290 liters to produce the same amount of beef.[

Healthy food

Here is a little more information.

For a more healthy diet red meat should be cut back. I used to eat red meat everyday. Now I eat it about once or twice a week.
Chicken is one of the healthiest meats followed by turkey and pork (Fish and seafood are really good too).
If you are going to eat Beef stick to lean cuts. If you really need some ground beef try to got 90%+ lean, I've seen some 99% lean before. When it comes to beef the leaner cuts tend to be very tough so you need to slow cook them or pressure cook them.

Another thing is that a serving of meat is about 4oz. 4oz Of plain chicken tenders are 100 calories.

Most of the meat packages now have the calories right on it. Always check labels!!!!

When cooking meat try to avoid frying foods or cooking foods in oil. Use spray oil when you can.

A standard meal as a protein source(Meat, Fish, Seafood, Complete proteins), a starch (rice, potatoes, grain, bread) and a vegetable.
A quarter plate meat a quarter plate starch and a half plate veggies. So 4oz boneless skinless chicken breast, 1 cup cooked brown rice and 2 cups green beans. There are tons of combos but you get the picture.
Try to eat 20grams of protein at lunch and dinner. (You need 50 grams of protein a day.)

A little bit on Nutrition, Weight loss tips

I went from 272lbs to 179lbs in about a year so here is a small guide to help anyone else out.

The average diet should consist of 2000 calories. At least 50 grams of daily protein intake.
If you are looking to lose weight consider that a pound of fat is equal to 3500 calories. And all the extra calories add up. Lets say you are eating a 2000 calorie diet and are burning the same about. You will never gain or lose weight. If you ate an extra 350 calories a day (extra cookies or such) you will gain a pound of fat every 10 days or if its 100 calories extra it would be 1 pound every 35 days. Get the picture. But it works the other way too say you stop drinking a pop or other drink a day at 100 calories. You will start losing 1 pound of fat every 35 days. A good way to do it is to maintain the 2000 calorie diet (like i do since i love to eat) and work out everyday even if it only burn 100 calories, every bit counts. I recommend a low impact workout to start. Aerobics is one of the higher calorie burning type of workouts.

A few wieght loss tips.
Stop drinking pop or any other sweet drinks.
Avoid Cream based sauces and Fried Foods.
Almost all fast food restaurants have all the calorie counts on there websites, the same with most major restaurants. Check them before you go out and figures out your food combos and choices to stay in your calorie count.
I stick to a 200 calorie breakfast,600 calorie Lunch,800 calorie dinner and an extra 400 calories for snacks.
Fiber and Protein keep you full longer.

Turkey Broth

Thanksgiving was great!!! And i had plenty of time yesterday to make broth out of the rest of the turkey.

Turkey Broth Pressure Cooker

1 Turkey carcass meat pulled off
3 yellow onions
6 stalks of celery
2 hand fulls of baby carrots or cooked carrots from thanksgiving dinner
2 bay leaves
6 sprigs of thyme
salt and pepper
10 cups of water

Combine all in a 2 gallon pressure cooker
Turn on high then lower once pressure is achieved
Cook for 1 hr
Turn off heat and let naturally depressurize
Once it cooled down enough put it in the fridge
when it cools more skim the fat off the top then it is ready to use

Happy Thanksgiving!!!! but i feel like talking about complete proteins

Complete Proteins
You get plenty of them if you eat meat but if you don't eat meat or much of it you need a vegetarian source of Complete Proteins.
Here is a list of Vegan Protein sources

  • Whole wheat toast with peanut butter
  • Bean soup with whole grain crackers.

    Some more ideas
    • Legumes and Grains - Black Beans and Rice with Red Peppers: Saute diced red peppers and onions in a non stick skillet. Add in drained and rinsed canned black beans and left over long grain rice. Add in a bit of cumin, black pepper and fresh chopped tomatoes and parsley. Cook until hot and serve.
    • Legumes and Seeds - Asian Noodles with Sesame Seed Dressing: Toss left over spaghetti pasta noodles with chopped green onions, julienne peppers, toasted sesame seeds and cilantro with a homemade dressing made with sesame oil, rice wine vinegar, pepper, soy sauce and a bit of sugar.
    • Grains with Dairy - Homemade Macaroni and Cheese: Make a white sauce using low fat milk and add in grated cheddar. Mix with pre cooked macaroni pasta and top with fresh bread crumbs and parmesan bake until bubbly and browned in the oven.
    • Legumes with Dairy - Fresh Green Bean Salad with Cucumber Yogurt Dressing: Steam fresh trimmed green beans or frozen whole haricot verts and chill. Make a yogurt dressing with green onions, diced cucumbers, salt, pepper, dry mustard and paprika and toss with the chilled green beans.

Lemon Cake

Here is the Lemon Cake Recipe to go along with the Lemon Frosting from yesterday.


1 cup unsalted butter, room temperature
1 cup granulated white sugar
4 large eggs
1 teaspoon pure vanilla extract
Zest of 1 large lemon (outer yellow skin of lemon)
2 cups all purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup fresh lemon juice

Preheat oven to 350 degrees F and place rack in the center of the oven.  Butter, or spray with a nonstick spray, a 9 inch spring form pan and then line the bottom of the pan with parchment paper.

In the bowl of your electric mixer (or with a hand mixer) beat the butter and sugar until light and fluffy and pale in color (about 3 minutes). Add the eggs, one at a time, mixing well after each addition. Beat in the vanilla extract and lemon zest.

Sift together the flour, baking powder
and salt and then add to the batter along with the lemon juice. Mix only until incorporated.

Pour the batter into the prepared pan, smoothing the top with an offset spatula. Bake about 40 minutes, or until a toothpick inserted in the center comes out clean. Place on a wire rack to cool, then gently remove the sides of the pan.
Makes one - 9 inch cake.

Frost as you like or when cake is done.
Or Turn into Cake Balls
Cool for 1 hour and crumble the whole cake up in a large bowl
Then Fold in 3/4 of the Lemon frosting (recipe on the other post)
Keep folding and mixing until you don't see frosting anymore
Then roll into balls and put in a freezer for 20 minutes
Take out and dip or roll in melted White Chocolate
Then top with Poppy Seeds
Return to freezer
Serve strait from the freezer or take out and let sit for 10-30 minutes (Depending on how you like it)

Lemon Cream Cheese Frosting

1 stick room temp. butter
1 8oz package room temp. cream cheese
1/2 tsp lemon extract
3 3/4 cup powdered sugar

Mix together till combined

Pressure Cooked Pot Roast

By far one of the easiest recipes.

3-6 lb beef roast your choice (lean cuts work great)
1lb carrot (washed and peeled)
1lb onion                                  
1lb celery 

[all three cut up or left whole depending on how rustic you want it]                          
2 cups beef broth
4-8 whole potatoes (washed and scrubbed)
Salt and Pepper

1oz Thyme
oil


Heat pressure cooker with lid off and a little oil
Brown meat on all sides and put to the side
Drain oil then add the carrot, onion, celery and beef broth
Put the roast on top of the veggie pile then put the potatoes on top
Secure lid, turn heat to high and bring to high pressure
Once high pressure is acheived low high and maintain pressure for 1 hour
After 1 hour take off heat and let it depressurize naturally

If gravy is wanted strain everything out at the end and add a cup of milk (or milk alternative) mixed with 4T of cornstarch to the broth, bring to a boil the simmer til thickened, stir the whole time

Baked Sweet Potatoes

Not feel that well today so here is something easy.

Baked Sweet Potatoes
4 Large Sweet Potatoes
Spray oil
Salt and Pepper

Pre Heat Oven or Convention Toaster Oven to 400 degrees
Wash and scrub the Sweet Potatoes
Dry off and prick all over with a fork
Spray down pan and spray the Sweet Potatoes all over
Sprinkle Salt and Pepper all over the Sweet Potatoes
Bake for 1 Hour
Serve with butter and sour cream or butter, Cinnamon and sugar

This same recipes works for regular potatoes.

I've made 3 games before and worked on 2 others that were not released. I like to use AGS (adventure game studio)
Big Blue Cup makes Adventure Game Studio.
This editor can make old Sierra type games like King's Quest, Police Quest, Space Quest and much more.
Comes with a basic template and character. It's fairly easy to put a game together. Go to http://sites.google.com/site/FruitStripeApe/ and check out my 3 games. My Games aren't really that good (they were all made in competitions with set guidelines so that contributes to how bad my games turned out haha)  but you will get the point. I'm not really good at drawing but i found putting all the pictures, sounds and all the rooms together pretty easy.

Lamb Shank Recipe

I got my first pressure cooker 3 years ago and now use them almost everyday. I thought about that when i bought some Lamb Shanks the other day. Here is a pretty easy pressure cooker recipe.

Lamb Shank

4 Large Lamb Shanks
Season with Salt and pepper
Then Brown in your pressure cooker with some oil


Once Browned put to the side and drain all the grease out of the Pressure Cooker
Add 1 cup Chicken Stock and 1 cup Red Wine to pressure cooker
Add 12 cloves crushed garlic, 4 sprigs of Rosemary and 10 sprigs of Thyme
Add Browned Lamb Shank, close lid and set to high pressure
Turn on high til pressure is achieved
Lower heat once pressure is achieved
Keep on for 30 minutes then take off heat and let rest til pressure goes down
Serve Lamb shanks with rice or Pita with Cucumber Sauce

If you want gravy, strain the mixture left after taking the meat off and put it back in the pot
Bring to a boil then simmer til thickened or add a thickener if you don't want to wait haha

Last Night... Scott Pilgrim vs. The World

I meant to make a post last night but got carried away with a bottle of sake and Scott Pilgim vs. The World.
I've been meaning to watch this movie since it came out. Saw the previews in the theater months before it came out. Then somehow did not realize it came out then went to look online for showing and the last showing was the next day. I had to work whe the last showing was. Last Showing 2pm on a thursday. I was shocked!!!

So last night I opened a bottle a small bottle of sake and popped in Scott Pilgrim.

This movie was way cooler then the previews!!! The whole video game theme was great. Loved all the music in it, the intro old school game music was sweet. The characters were well made, the fight scenes were awesome. Everyone turning to coins when defeated was just like a few games I've played before.
I don't want to give too much away for people that have not seem this. :^)
Great movie, I recommend it. 10 out of 10

I'm trying to do a post a day so i will try to make another one today to make up for not making one last night.

Malaysian Nasi Lemak (Coconut rice) with Chicken Rendang

I went to an awesome Malaysian restaurant today so here are 2 recipes.

Nasi Lemak first

Ingredients

  • For the rice:
  • 2 cups coconut milk
  • 2 cups water
  • 1/4 teaspoon ground ginger
  • 1 (1/2 inch) piece fresh ginger, peeled and thinly sliced
  • salt to taste
  • 1 whole bay leaf
  • 2 cups long grain rice, rinsed and drained
  •  
  • For the garnish:
  • 4 eggs
  • 1 cucumber
  • 1 cup oil for frying
  • 1 cup raw peanuts
  • 1 (4 ounce) package white anchovies, washed
  •  
  • For the sauce:
  • 2 tablespoons vegetable oil
  • 1 medium onion, sliced
  • 3 cloves garlic, thinly sliced
  • 3 shallots, thinly sliced
  • 2 teaspoons chile paste
  • 1 (4 ounce) package white anchovies, washed
  • salt to taste
  • 3 tablespoons white sugar
  • 1/4 cup tamarind juice

Directions

  1. In a medium saucepan over medium heat, stir together coconut milk, water, ground ginger, ginger root, salt, bay leaf, and rice. Cover, and bring to a boil. Reduce heat, and simmer for 20 to 30 minutes, or until done.
  2. Place eggs in a saucepan, and cover with cold water. Bring water to a boil, and immediately remove from heat. Cover, and let eggs stand in hot water for 10 to 12 minutes. Remove eggs from hot water, cool, peel and slice in half. Slice cucumber.
  3. Meanwhile, in a large skillet or wok, heat 1 cup vegetable oil over medium-high heat. Stir in peanuts and cook briefly, until lightly browned. Remove peanuts with a slotted spoon and place on paper towels to soak up excess grease. Return skillet to stove. Stir in the contents of one package anchovies; cook briefly, turning, until crisp. Remove with a slotted spoon and place on paper towels. Discard oil. Wipe out skillet.
  4. Heat 2 tablespoons oil in the skillet. Stir in the onion, garlic, and shallots; cook until fragrant, about 1 or 2 minutes. Mix in the chile paste, and cook for 10 minutes, stirring occasionally. If the chile paste is too dry, add a small amount of water. Stir in remaining anchovies; cook for 5 minutes. Stir in salt, sugar, and tamarind juice; simmer until sauce is thick, about 5 minutes.
  5. Serve the onion and garlic sauce over the warm rice, and top with peanuts, fried anchovies, cucumbers, and eggs.   



      Chicken Rendang
    endang is a curried and stewed meat dish, cooked with coconut milk, galangal, lemongrass, kaffir lime leaves with other spices. The dish is braised for hours, depends on the type of meat used, till the oil and extract of all the ingredients are cooked out, which later acts as natural preservatives. A well-cooked rendang dish can be stored up to days in room temperature, weeks in refrigerator and months in freezer. I did not make this up.This dish is prepared by using almost all spices available to Indonesian cooking.
    Originated in Padang, West Sumatra, this dish has been adapted on other areas in Southeast Asia. Original Rendang Padang is dark brown in color, Rendang Java is yellow in color. The difference is in the base paste used.
    Chicken rendang needs to be cooked for 1-2 hours. Beef rendang can take 2-4 hours. The longer the process, the better it taste. Rendang is at its best on the second and third day after cooking. The spice really settles and enriches the dish.
    The recipe featured here is chicken rendang. Whole chicken is used. The spices are made from scratch. There are many commercially packed rendang spices. They are easy to prepare, but to make the most out of it, add half of the spice ingredients I have here and you will have outstanding instant rendang.
    Ingredients
    For spice paste
    100 grams red chilies
    65 grams (12) shallots
    25 grams (6) cloves garlic
    25 grams (6) candlenut
    10 grams (1/8 cup) coriander seeds
    4 dried chilies, soaked with hot water and pat dried
    1/4 teaspoon cumin
    1/2 teaspoon whole white pepper
    1/4 fresh nutmeg
    Other ingredients
    1,2 litre coconut milk, pressed and strained from 4 freshly grated coconut
    1 turmeric leaf (alternatively, substitute with a pinch of turmeric powder)
    3 kaffir lime leaves
    10 salam leaves
    4 stalks lemongrass, halved and pounded to release juice
    50 grams galangal, pounded to release juice
    2 whole cardamom
    1 star anise
    3 cloves
    2 tablespoons sugar
    2 teaspoons salt
    1 kilogram chicken, cut into medium size pieces
    1 medium size potatoes, peeled and quartered
    Instructions
  6. Grind spices for paste into medium-to-fine paste
  7. In a big heavy stainless steel pot, cook half of coconut milk, spice paste, turmeric, kaffir lime leaves, salam leaf, lemongrass, galangal, cardamom, star anise and cloves over low heat for 10 minutes
  8. Add sugar and salt. Increase heat to medium. Cook for 5 more minutes
  9. Pour in the rest of coconut milk and potato. Cook over medium heat for 1 hour, stirring constantly to avoid burning till the coconut oil starts to separate from the milk. The dish should be simmering slowly with small bubbles. Cover partly to avoid splatter
  10. Toss in pieces of chicken. Cook for another hour. Season with more salt and sugar if desired. If potatoes are used, add potatoes at this stage. Cook for another half an hour
  11. Serve warm with steamed rice or country bread

There is a few misconceptions about organic and non organic food. Non Organic food is bigger only because there is twice as much water in compared to organic. So organic tends to have more flavor.

Ok, it's Monday and i have no inspiration. So i will put the movies I'm looking forward to see.





Mega Mind looks pretty good. Familiar voices for all the parts, interesting story line.
Skyline I must see since I love movies with Aliens and Spaceships.
Ok, i'm not a huge harry potter fan but i still like it and just watched Half prince a few nights ago.
The preview for The Warriors Way looked awesome. Unrealistic but still looks enjoyable.

Hope to get some inspiration so i can post something interesting. haha Where is my Muse?

It contains over 100 lunch recipes, how to come up with your own meals and helps with the composition of Veggies, meat and starch. Very informative and Great Recipes. I hope to buy there book, it's preorder on amazon but won't be out until the end of this year or early next year.

Wii Picks for This Season

Here are my picks for the rest of the year.
Number 1 is Just Dance 2
For obvious reasons, Any games that makes you move and have fun is a plus. The first one is pretty cool so add more songs and features then you have an awesome game.

Number 2 is U-Draw
It makes me happy to see Nintendo making now things to interact with on the wii.  Drawing pads can be a few hundred dollars for PC. This includes a drawing program and you can use a flash card to save your pictures and print them. A++
Number 3 is Pictionary, a no brainer considering #2.
You use this game with U-Draw. The only way to make Pictionarty better. Add a boardgame aspect to it and no need for pencils and paper. 
Number 4 is Epic Mickey.
If you ever owned or played the Mickey game for Sega this game is a must have. Just check out one of the video clips and you will agree.

Number 5 is Marble Saga Kororinpa.
This game may seem strange if you haven't seen/played the first game. It is like Monkey Ball execept you control the whole level not the ball. What's better than being able to play as a pig ball or panda ball.

On a side note the best work out game this year so far is Gold's Gym Dance Workout. Don't worry there is still boxing. The dancing can get really hard but it's broken up into small sections so don't worry. It tells you all the calories you burnt and how well you did in each segment of the work.

Starting Anew

I'm slowly updating my profile and making changes to my web-page. 
I'll probably get better with each post and get better at documenting what I'm doing.
The gears and cogs are starting to churn in my head.

I love cooking and love making new things. So i will start putting up all the weird things I've been cooking and researching.
