Pressure Cooked Pot Roast

By far one of the easiest recipes.

3-6 lb beef roast your choice (lean cuts work great)
1lb carrot (washed and peeled)
1lb onion                                  
1lb celery 

[all three cut up or left whole depending on how rustic you want it]                          
2 cups beef broth
4-8 whole potatoes (washed and scrubbed)
Salt and Pepper

1oz Thyme
oil


Heat pressure cooker with lid off and a little oil
Brown meat on all sides and put to the side
Drain oil then add the carrot, onion, celery and beef broth
Put the roast on top of the veggie pile then put the potatoes on top
Secure lid, turn heat to high and bring to high pressure
Once high pressure is acheived low high and maintain pressure for 1 hour
After 1 hour take off heat and let it depressurize naturally

If gravy is wanted strain everything out at the end and add a cup of milk (or milk alternative) mixed with 4T of cornstarch to the broth, bring to a boil the simmer til thickened, stir the whole time
