Big City Chicken Alfredo with Linguine (City Chicken Pun)

Big City Chicken Alfredo with Linguine (City Chicken Pun) 

2lbs Pork shoulder roast (fat removed and meat cut into small cubes)
2 Cups vegetable broth (or homemade pork/beef/chicken broth)
Salt + Pepper
1 T Dry Rosemary (crushed in your hand right before adding)
1T oil (spray oil)

Sauce
1 Cup Whole Milk (skim/2%,almond,rice or soy milk can be used)

1/2 Cup Heavy/Whipping Cream (Cream Cheese can be substituted)
4T Butter (or butter like product)

1 Cup Parmesan Cheese 

Thickener
1 T Corn Starch
1T Water

Mixed together

Pasta
8oz Linguine
 4-8 cups water
Boil for 9:30

Season the cubes pork with salt and pepper
Brown in a hot pressure cooker
Once Browned add 2 cups broth and 1T dry rosemarySecure pressure cooker lid and turn to high heat
Once Pressure is achieved lower high
Pressure Cook for 20 minutes then turn heat off
Let the pressure cooker depressurize naturally
Drain in Colander
Set to the side

In a small pot add the 1/2 cup Heavy Cream,1 Cup Whole Milk and 4T Butter
Bring heat to medium until the butter is melted
Then start to add the cheese a little at a time until it is melted
Add the thickener and increase heat
Bring to a boil then turn to low and stir until thickened

Add the Pork to the sauce, mix then top on the Pasta

I suggest eating with a salad of baby greens
Drizzled with a vinaigrette and a hand full of croutons
And extra cheese from the recipe

Simple Vinaigrette
4T Canola Oil
1 1/2T Red Wine Vinegar (any vinegar will work)
Crushed Dried Herbs (oregano, thyme, marjoram, rosemary, and/or savory)
Salt + Pepper (Fresh cracked pepper, Get a Pepper Mill!)

Serves 3-4 Depending on Hunger haha
