Easy Tuna Salad Lunch. Easy Pork Tenderloin w/ Sweet Potato Dinner

This is what was I made today being snowed in and all here in NE Ohio.

Easy Tuna Salad Lunch 

12oz family size Tuna pouch
2 stalks of Celery (cut in half long ways and cut into little cubes)
2 medium size Dill Pickles (cut into little cubes)

Salt + Pepper (to taste)
6T Mayo (more or less depending on how moist you want it)

Mix all ingredients together until incorporated
Chill in fridge or eat right away

I ate my old school subway style and cut the top of a small Ciabatta around the top edges and took some of the bread out of the inside and filled with Tuna Salad topped with mixed green, vinegar and the top of the bread.


Easy Pork Tenderloin w/ Sweet Potato Dinner
1lb Pork Tenderloin
salt + pepper
1T oil

6 medium Sweet Potatoes(Yams are great too)
Pressure cooker with Steaming basket

Preheat the oven to 400F
Brown pork well in a preheat oven safe pan
Once browned Season with Salt + Pepper
Put into the oven and cook for 20 minutes
Then take out and let rest in pan for 10 minutes

At the same time pressure steam the Sweet Potatoes for 20 minutes

Thin slice the Pork and serve over greens with a fresh made vinaigrette, put the sweet potatoes on the side and top with a big spoonful of sour cream.
